This project was born from a dream. At first it seemed impossible to create gluten-free bakery and pastry products, with a structure that is only obtained by including this set of proteins. But we never stop believing. We have constantly strived, researching, testing, repeating recipes, changing ingredients, always motivated by the possibility of offering a product of excellence for those who dream of trying a piece of bread or a cake. The result is here, for you, our best allies, to enjoy and through her experience in Lolita, help us improve.

Those of us who are part of Lolita are dreamers. We strive daily for offering the best gluten-free pastry and bakery products. The joy of our customers at being able to consume products whose flavor they longed for inspires us daily to improve.
This team is led by Chef María Grazia Borja, the first to believe and create each product, with care, dedication and absolute passion.
The perserverance with which she has investigated each mixture in detail makes her almost a pastry alchemist. Although he studied in Buenos Aires and He has passed through the kitchens of Michelin-starred restaurants in Argentina, Brazil and Spain, and has learned from great experts also in Ecuador and the United States, his true strength lies in the passion with which he dedicates himself to this project.
A lover of the kitchen and connoisseur of the pleasure that a mixture of flavors can cause in the mouth, her goal is that those people who do not tolerate gluten, can relish a piece of hot bread or a cake that they had deprived of for years. That that seemed impossible, for her it only took a bit more time.
